Ohhh, those are beautiful. Just one thing that distresses me, though- when I go a nice restaurant and I'm served such beautifully presented desserts, I always feel slightly reluctant to take that first mouthful because it means I'll be wrecking art!
It's wonderful when somewhere actually does take the time for presentation, but I've yet to be offered something quite as artistic as some of your creations.

I followed the link from Three Panel Soul, and just looked through the gallery. Amazing and beautiful. I watch Food Network and see the various "challenge" episodes, and wish I had opportunities to do the amazing things I've seen there and in your gallery.

I also noticed in one of the photos:

Hobart! That is the industrial mixer of choice, but it is cumbersome. I have tonnes of stuff to say about them.

What setup do you use for your creations? Do you critique the works of others?

I've only ever worked with "Buttercream" icing, Layer Cake, Chocolate Cake, Chocolate Icing, and Pound Cake. It's a small family business. My specialty is Shaped Cakes.

Again, beautiful gallery. Maybe you could do some video of the process, and upload that. I've done something like that on my site, but it's really just for family all over the country (I haven't put much effort into my site's design yet).

Let me know if I can send you links to some photos of my cakes.

Wow! Just Wow! Too bad you aren't on the East Coast, because I would definitely snap up some of these. Your sense of presentation is amazing!

Ever thought of doing the online thing?
